Trypsin inhibitors like SBTI (Soybean Trypsin Inhibitor) can protect plants against pests. They inhibit the digestive enzymes (proteases) in the insects’ digestive system. SBTI is known to bind to certain digestive enzymes (endopeptidases) in bees as well and to increase their mortality rate. Trypsin (protease) inhibitors have also been introduced into various plants using genetic methods to reduce the growth and survival of pests. Various plant-based foods, especially soya beans, contain trypsin inhibitors in their raw state that also disrupt the human digestive system. However, high temperatures render these substances harmless. Products like soya beans should therefore be cooked before they are eaten. Soya oil is refined and therefore no longer contains these enzymes. |
