Perspective A commercial use of GM cucumbers is not to be expected in the long run.

 

Cultivation

Cucumbers are cultivated worldwide. Since this species of pumpkin grows in tropical to temperate warm climate regions, it is cultivated in green houses in cold areas. In 2005, China harvested the most cucumbers, followed by Turkey, Iran, Russia and the USA. World wide, 41,7 million tons cucumbers were produced.

 

Utilisation

It is a fruit with few calories (9,7 kcal/100g) that consists of as much as 97 per cent water.

The cucumber is

  • consumed raw or

  • Conserved by lactic acid fermentation (gherkins) or by preserving with a vinegar brew (gherkins).
