Cultivation

Both the mild vegetable peppers and the hot chilli peppers belong to Capsicum annuum and they represent the most widely grown type of capsicum. They were originally cultivated in the tropics, but today are also grown in regions with subtropical and moderate climates. The leading producing countries are China, Mexico and Turkey. In 2005, 24.9 million tonnes of peppers were produced worldwide.

Utilisation

Peppers are consumed in two different ways:

  • raw or cooked as a vegetable
  • hot varieties in a pulverised form as a spice
