Persipan

Description

Persipan is similar to marzipan. Instead of almonds, however, apricot or peach kernels are ground with sugar to a form a paste. Persipan comprises 40% ground kernels and 60% sugar.

Gene technology

Possible applications of gene technology for the persipan ingredients:

  • The sugar can originate from GM sugar beet. In the EU, food- and feedstuffs from GM sugar beet grown in North America have been approved. No commercial cultivation of GM sugar beet is currently planned in the EU.
    In the EU, sugar is at present made from conventionally grown beet.
  • Instead of sugar, glucose syrup can be used in making persipan.
  • To prevent the crystallisation of sugar, invertase is sometimes added to persipan.

Labelling: ingredients based on starch that is directly produced from GM plants (e.g. maize) have to be labelled as such.
If the sugar originates from genetically modified sugar beet, this also has to be declared.
Enzymes and their method of production are not generally part of the list of ingredients.
