Breadcrumbs
DescriptionTraditionally, breadcrumbs are made from grated bread or rolls. Today, enzymatically modified starches and flour are used. The term "breadcrumbs" can be used for breadcrumbs of any kind. ApplicationBreadcrumbs are used to coat meat, fish, croquettes and fish fingers, often in conjunction with egg or egg white. For certain products such as fish fingers the coating can account for up to 35% of the weight. Gene technologyPossible applications of Biotechnology:
Labelling: Breadcrumbs that contain maize or soya flour from GM plants have to be labelled as such. Generally, enzymes do not have to be declared. |
