Description

Traditionally, breadcrumbs are made from grated bread or rolls. Today, enzymatically modified starches and flour are used.

The term "breadcrumbs" can be used for breadcrumbs of any kind.

Application

Breadcrumbs are used to coat meat, fish, croquettes and fish fingers, often in conjunction with egg or egg white.

For certain products such as fish fingers the coating can account for up to 35% of the weight.

Gene technology

Possible applications of Biotechnology:

  • The bread or rolls that are ground to form the breadcrumbs can contain genetically modified enzymes and other baking ingredients (see also: baking mixtures).
  • Breadcrumbs can also contain sojaflour, or more rarely maizeflour. Soya and maize can originate from GM- lants.
  • The utilisation of starches that have been produced using GM enzyme (amylase) is also possible.

Labelling: Breadcrumbs that contain maize or soya flour from GM plants have to be labelled as such. Generally, enzymes do not have to be declared.
