Yeast extract

Description

Yeast extract is produced from the cell sap of specific yeasts and is rich in vitamins and proteins.

Application

• as spread or as ingredient
• in seasonings and stock cubes
• in flavourings or flavouring preparations: specific yeast extracts develop intense flavours that are similiar to those of meats.

Gene technology

Yeast: research on gene technology is performed on yeast.

• To date, no genetically modified yeasts have been approved in the EU. Precise information is not available on the commercial use of genetically modified yeast outside the EU.

Nutrient solutions for yeast: the application of gene technology is possible among the nutrient solutions which are used in the breeding and propagation of yeast.

Labelling: foods that contain genetically modified yeasts or are produced therefrom are subject to labelling.

Yeast products or foods are not subject to labelling if the nutrient solutions used in the breeding and cultivation of the yeasts in question were won from genetically modified plants.
