Fondant

 

Possible application of gene technology Labelling
Raw material starch from GM maize possible

 

Description

Fondant is creamy mass that is crystallised from a saturated solution of saccharose (sugar), glucose syrup or invert sugar syrup.

Application

Fondant is used to fill confectionery, pralinés and chocolates.

Gene technology

Possible application in the ground components of fondant:

  • glucose syrup
  • invert sugar syrup
  • the sugar may stem from genetically modified sugar beets. In the EU, a GM sugar beet that is cultivated in North America is approved as food and feed. To date, the commercial cultivation of GM sugar beets is not planned in the EU.
    Currently, sugar in the EU is manufactured exclusively from conventional beets.

Labelling: Starch-based additives are subject to labelling if they are produced directly from genetically modified plants such as maize. It has not been conclusively clarified if this also applies to fondant, which is produced from starch in several steps. If sugar is manufactured from genetically modified sugar beets, these ingredients are subject to labelling.
