Gingerbread

Description of product

Gingerbread is a long-life bakery product containing a high proportion of sugar, honey, dextrose or glucose syrup. The characteristic flavour of this Christmas speciality results from the addition of a specific spice mixture (gingerbread spice) prepared from aniseed, cloves, coriander, cardamom, allspice and cinnamon.

Many varieties and shapes of gingerbread are available, including "printe", honey gingerbread and dominos.

Possible application of gene technology

Applications of gene technology are possible in the following ingredients that commonly are found in gingerbread. However, the extent to which a particular product is affected by these possibilities cannot be stated with certainty:

• glucose syrup, fructose syrup, dextrose
• sugar
• starch and modified starches
• invertase or inverted sugar in the marzipan- or persipan (marzipan substitute) filling
• caramel oder caramelised sugar syrup
• lecithinin chocolate coating or plant fats in the glazing of lower quality products (gingerbread squares)
• acidifier citric acid
• in some cases whey solids (also declared as milk protein or whey powder) or egg powder
