Description of product

Gourmet salads are ready-to-eat preparations with portions of meat, sausage, cheese or fish as well as egg, vegetables, potatoes and mushrooms with mayonnaise or dressing.

Possible applications of gene technology

Applications of gene technology are possible in the following ingredients that commonly are found in gourmet salads. However, the extent to which a particular product is affected by these possibilities cannot be stated with certainty:

Mayonnaise:

  • oil: plant-based fats, e.g. soya oil, rapeseed oil / canola, corn oil
  • emulgators such as lecithin, mono- und diglycerides
  • conservation with enzymes: catalase, glucose oxydase
  • thickened sauces also may contain the colouring beta-carotene

In particular in the case of reduced-calorie products:

  • starches and modified starches
  • sweeteners such as sorbitol, aspartame
  • milk protein or whey powder
  • acidifier citric acid
