Description of product

Dominoes are chocolate-covered cubes of gingerbread.

• The delicious cubes are filled with layers of marzipan, persipan, fruit purée or fruit jelly.
• In products of lower quality,fondant creme also may be used.

Possible application of gene technology

Applications of gene technology are possible in the following ingredients that commonly are found in dominoes. However, the extent to which a particular product is affected by these possibilities cannot be stated with certainty:

• fructose syrup
• glucose syrup
• sugar
• invertase or invert sugar in the persipan or marzipan filling
• caramel or caramel suger syrup
• lecithin in the chocolate covering or plant-based fats in the glazing in products of lower quality (gingerbread pieces)
• acidifier: citric acid
• stabiliser: sorbitol
• flavour
