Function

Aminopeptidases cleave single amino acids from specific proteins. This can, for example, change the flavour and aroma of proteins. Amino acids are the basic building blocks of proteins.

Application

  • Aminopeptidases are used in the production of cheese, beverages, flavourings, meat and milk products. They are typically meant to enhance and optimize aroma and flavour.

  • The addition of aminopeptidases can accelerate the maturing of cheese.

  • as an additive to animal feed (improved utilisation of proteins in feed for piglets and poultry)

Gene Technology

Aminopeptidases have been produced biotechnically for some time utilizing various fungal and bacterial cultures (such Aspergillus and Lactococcus).

  • Various preparations of aminopeptidases are available in the EU. One of these preparations is manufactured with the aid of genetically modified microorganisms (Trichoderma).

Labelling: Labelling of enzymes in regard to their production using GM microorganisms is generally not foreseen in the European Union.
